This vegan pesto is full of flavor and uses garlic, hemp hearts, lemon, hemp seed oil, and of course⦠fresh basil and some herbs like parsley, coriander, and mint. Vividly green and surprisingly creamy, it has a piquancy and depth that can only be achieved by pounding fresh ingredients into submission with a pestle and mortar. Replacing olive oil with hemp seed oil adds a distinct nutty flavor which definitely makes it more savory.
Pesto sauce pairs well with pizza and pasta of course, but also as a veggie dip or spread on a sandwich.
INSTRUCTIONS
1. Combine basil, HEMP HEARTS, garlic, and Parmesan Cheese to a food processor and blend. The ideal would be to use pestle and mortar.
2. Mix in salt and pepper and then slowly add the HEMP SEED OIL.
3. Add a few drops of fresh lemon juice to finish off.
4. Pesto is rarely cooked, instead simply stirred into a dish at the last minute to retain its vibrancy.
